    No Butter No Eggs No Dairy Moistest Ever Zucchini Bread

    This is so far the moistest and best zucchini bread I have ever made.  Adapted from it's original recipe to be lower sugar, it's also totally vegan.  Pretty healthy snack !  Here is the recipe:

    6 T flax seeds

    1/2c warm water

    1 cup turbinado sugar

    1 cup applesause

    1 tsp vanilla

    1/2 cup oil

    2 - 2 1/2 cups shredded zucchini

    2 cup flour

    1 cup brown rice flour

    1 T baking powder

    1 tsp baking soda

    1 T cinnamon

    2 tsp nutmeg

    1 tsp salt

    handful of Nutiva Superseed Blend (optional)

    Grease 2 loaf pans

    Mix flax seeds and the water together.  Mix in the sugar, applesauce, oil and vanilla and beat well.  Add grated zucchini and stir until combined. 

    In a separate bowl, stir together the remaining dry ingredients.  Add dry mixture to the wet and stir just until combined.  Add you superseed blend and divide batter evenly in the two pans.  Bake 45-55 minutes until toothpick comes out clean.

    Let cool, slice and enjoy!
